If you have recently switched over to a vegan lifestyle (or are thinking about it) you may have faced some challenges around what you can eat. You’re not the only one, like me, veganism has definitely had it’s ups and downs. In a society that puts meat and dairy products in almost everything it can sometimes be challenging to make sure you get enough of what you need throughout the day. That’s why I wanted to share some of my staple snacks with you, as long as you have these ingredients in the fridge you won’t go hungry. They’re so easy to make, super fast and filling. Vegans need to snack too! Here are a few ways you can start (or continue) to stay fueled and animal friendly.
Vegan Pita Pizza
Ingredients
Pita
Tomato sauce/ pasta sauce/ pizza sauce
Daiya Mozzarella and/or Cheddar Cheese shreds (it’s vegan)
Veggies (I like bell peppers, olives and spinach)
Pre-heat oven to 275 or 300 degrees. Chop up your veggies. With a spoon, spread a dollop of tomato sauce evenly over the pita. Sprinkle some cheese shreds. Toss those veggies on top. Pop in the oven for about 5 mins (it might be a bit more or less depending how you like it). Let cool and devour.
Frozen Fruit Puree with Melted Jam and Chocolate Sauce
Ingredients
Frozen fruit (I used mangos, peaches and a few strawberries)
Almond milk
Jam (made with pectin not gelatin)
Vegan chocolate for melting (chocolate chips harden quickly, so if you want it to stay soft Hershey’s chocolate syrup is totally vegan!)
Blend up your fruit on pulse with a splash of almond milk, check on it to make sure you get the consistency you want. Scoop that into a bowl and put it in the freezer for now. Melt some jam in the microwave for 10 seconds in a microwave safe bowl. You can do the same with your chocolate but I recommend using vegan chocolate syrup instead of melting hard chocolate unless you want the chocolate to harden quickly (still good). Take the fruit out of the freezer and pour the jam on top. Pour the chocolate syrup on top. Enjoy.
Celery Boats
Ingredients
Celery
Peanut butter
Raisins / Cranberries
Chop up your celery. Spread peanut butter into the fold. Sprinkle raisins on top. Yum.
Peanut Butter & Banana Rolls
Ingredients
Peanut butter
Banana
Tortilla wrap
Take your tortilla wrap and spread peanut butter evenly over top. Take the peeled banana and lay it down on the tortilla and roll it up. Once rolled, slice into pieces. Delish.
I love the pitta pizza idea but I’d prefer ciabatta I think. My go tos are definitely vegan Mac and Cheese (not that quick but super simple), and fried veggies with rice and hummus <3
